Rib Mop Sauce for Weber Kettle Grill

When you’re working the classic Weber kettle with a two-zone fire, you need a mop that holds up to both heat and smoke — one that won’t burn off or overpower the meat. This version of our Pit Glaze Mop blends savory depth with a smooth touch of agave to give your ribs that perfect balance of bite, bark, and shine.

It’s built for the long haul: apply during the indirect cook to layer flavor and hit it again over direct heat to finish with a caramelized kiss.

Flavor: Deep, savory, smoky with mild heat and a touch of natural sweetness
Best For: St. Louis ribs, long cooks, or layering glaze

Ingredients

  • 1 (16 oz) bottle Gabrick Texas Tang
  • ¾ cup low-sodium chicken broth
  • ½ cup white vinegar
  • ¼ cup light agave syrup
  • 1 tbsp Worcestershire sauce
  • 1 tbsp brown mustard
  • 1 tsp chipotle or ancho chile powder
  • Juice of 2 lemons

Instructions

  1. Combine all ingredients in a saucepan.
  2. Warm gently over low heat until well blended — do not boil.
  3. Mop onto ribs every 30–45 minutes during cooking.
  4. For glossy finish, reapply during the final hour of your cook.
