When the COVID-19 mandate forced our food trailer to close on Sunday, March 9, 2020, we faced a choice: adapt or fade away. Instead of surrendering to uncertainty, we transformed our popular barbecue sauce from a trailer staple into a bottled treasure — turning crisis into opportunity. Our mission stayed the same: delivering a "double portion" of heartfelt hospitality, now captured in every bottle we produce.
The sauce line began with three distinctive flavors: Texas Tang, Sweet Heat, and Spicy Red. Each proved a perfect companion for everything from beef brisket to seafood, winning over thousands of customers. The family grew a year later with Candy Jalapeño®, which quickly became a favorite, followed by Sugar Peach in 2024.
Behind these sauces stands Mark Gabrick, whose barbecue journey began in Kansas City and flourished in the heart of Texas and Florida. Under the guidance of champion pit-masters through the Florida BBQ Association (FBA), Mark mastered the intricate art of barbecue. His food truck in Tampa became legendary, drawing crowds and earning recognition from the city's Mayor, who regularly invited him to municipal events.
Mark's expertise caught the attention of industry leaders, leading to consulting roles with prestigious restaurants and collaboration with the National Restaurant Association's President. His success expanded beyond mobile dining when he launched an award-winning brick-and-mortar restaurant concept.
The accolades kept coming. Mark's sauces have ranked among the Top 20 of the world's best at the Kansas City American Royal, and earned him the State Flag of Texas from Governor Abbott. In a field of 2,500 competitors, his sauces won H-E-B's "Quest for Texas Best." Today these award-winning sauces are in over 1,100 stores nationwide and growing. Beginning April 2026, Gabrick sauces will be available in 248 World Market stores across 38 states.
Mark's work has been featured in Edible, Texas Monthly, Austin American-Statesman, The Atlanta Journal-Constitution, Sarasota Magazine, Tampa Bay Business Journal, and The Kansas City Star. The Texas BBQ Posse — run by former Dallas Morning News journalists — crowned him "The Sauce King of Texas."
