About this one
Great smoked chicken starts the night before.
Juicy Bird™ is our competition-inspired overnight poultry brine mix, made specifically for chicken, turkey, and game birds. Mix it with cold water, brine overnight for 14–18 hours, then cook it however you like: grill, smoker, oven, or fryer. We set out to do one thing exceptionally well: help you make poultry that stays incredibly juicy and flavorful when it comes off the heat.
How to Brine Chicken and Turkey with Juicy Bird
16 oz (452 g) pouch
• Chicken brine: 1 cup Juicy Bird + 1 gallon cold water
• Turkey brine: 2 cups Juicy Bird + 2 gallons cold water
1. Shake the pouch, then mix the brine with cold water until dissolved.
2. Submerge the poultry in a food-safe container or brining bag.
3. Refrigerate and brine for 14–18 hours.
4. Remove from the brine, rinse, and pat dry before cooking.
Food safety: Keep poultry at 40°F or below while brining, cook to an internal temperature of 165°F, and discard the brine after one use.
Built for Juiciness and Flavor
We put Juicy Bird through extensive testing to develop a formula that helps poultry retain moisture throughout the cooking process. But we didn't stop there. We wanted a brine that also brings depth of flavor, better browning, and overall cooking performance to the finished bird.
Juicy Bird combines salt, sugars, broth, and carefully selected ingredients to help season poultry throughout the brining process while helping it retain moisture during cooking.
We use broth to add depth and richness, carrying on the same approach we use in our sauces. And unlike formulas that rely on sodium phosphates for moisture retention, Juicy Bird contains no added sodium phosphates.
The salt and sugars are carefully balanced to play an important role in the brining process while also contributing to browning and flavor development during cooking.
Just as important, we intentionally kept the flavor profile balanced. No overwhelming garlic. No heavy onion flavor. No aggressive heat. Juicy Bird complements the meat rather than taking it over.
Use it as-is, or add your own herbs, spices, or secret ingredient to make the brine your own. For ideas, try fresh rosemary, thyme, sage, sliced onions, bay leaves, and peppercorns.
From the Competition Circuit to Sunday Supper
Juicy Bird is just as comfortable at the dinner table as it is on the competition circuit.
Roast a chicken for Sunday supper. Grill one for a special weeknight meal. Brine a turkey for a family gathering. Smoke a bird when you have the time to fire up the pit. Or use it when you're cooking a date-night dinner and want something a little more special.
Competition Pro Tip
If you're competing on the barbecue circuit, Juicy Bird was created with competition cooks in mind as well. When you're looking for an edge in the turn-in box, Juicy Bird is formulated to help deliver moist, well-seasoned poultry. Two ways to dial it in:
• Swap the water for low-sodium chicken broth. Our label suggests this for richer chicken flavor, and it's an easy way to build more chicken flavor into the bird.
• Go stronger. For a higher-strength chicken brine, use the whole pouch (about 2 cups) with one gallon of water or low-sodium chicken broth. That's double the ratio printed on the pouch, so do a practice cook before contest day and adjust to your own taste and your contest rules.
Why Juicy Bird?
• Designed for exceptional juiciness
• Extensively tested for moisture retention during cooking
• Broth for added depth and richness
• No added sodium phosphates
• Salt and sugars formulated for both flavor and function
• Contributes to browning and flavor development
• Balanced flavor profile that won't overpower your meat
• Add your own herbs, spices, or secret ingredients
• Perfect for chicken, turkey, and game birds
• Roast, grill, smoke, or fry
Juicy Bird™ is for people who simply like to eat better-tasting meat. Because great barbecue doesn't always start with the fire. Sometimes, it starts the night before.
Frequently Asked Questions
How long do I brine chicken?
Brine chicken for 14–18 hours in the refrigerator.
What temperature should I cook brined chicken in the oven?
Ovens vary, and altitude can change cook times, so let your thermometer make the call. In our central Texas kitchen, we rinse and pat the bird dry, then roast it at 425°F. We pull it as soon as the thickest part of the breast or thigh reaches 165°F, away from the bone, then let it rest for 15 minutes so the juices settle back into the meat.
Can I use Juicy Bird as a Thanksgiving turkey brine?
Yes. Use 2 cups of Juicy Bird with 2 gallons of cold water.
Do I rinse the bird after brining?
Yes. Lightly rinse and pat dry before cooking.
Can I reuse the brine?
No. Discard the brine after one use.
Does Juicy Bird contain Trisodium phosphates (TSP)?
No. Juicy Bird contains no added sodium phosphates.
Is Juicy Bird vegetarian?
No. It's made with chicken broth. And we're here to cook a great bird.
Will it overpower my rub or seasoning?
No. The flavor is intentionally balanced, with no overwhelming garlic, salt, onion, or heat.
