Why We Created Juicy Bird™: The Overnight Poultry Brine We Spent Two Years Perfecting

I didn't set out to make another chicken brine.

I wanted to make chicken that was so good, you didn't need to do much else to it.

That sounds simple enough. It wasn't.

For the better part of two years, we tested brines. Different salt levels. Different sugars. Different ingredients. Different soaking times. Chicken after chicken after chicken.

And yes, there was a lot of chicken eaten around here.  Our dogs helped in the experient too as they were given the control- the unbrined chicken.  We ate the flavorful brined 1/2.  Win/win!

We kept coming back to the same question though:

Can we make an overnight poultry brine that gives you incredibly juicy, flavorful chicken without making it taste like a science experiment?

Eventually, we got there.

That's how Juicy Bird™ was born.

Why We Chose a Phosphate-Free Brine

One of the decisions we made early on was that we didn't want to use sodium phosphates.

Phosphates are widely used in the food industry, including in poultry. There are also plenty of experienced people in the barbecue world who use them and will tell you they're perfectly fine.

I understand that.

For us, it came down to a different question:

Did we need them to make great chicken?

After all the testing we did, our answer was no.

We decided we'd rather build the brine around ingredients we were comfortable putting in our own food and let the chicken speak for itself.

So Juicy Bird™ contains zero phosphates.

And then something happened that we honestly didn't expect.

We cooked the chicken.

We tasted it.

And we didn't put BBQ sauce on it.

We didn't put a rub on it.

We just stood there eating the chicken.

That was the moment we knew we had something.

The chicken was that damn good.

Getting the Salt Balance Right

This was one of the hardest parts to get right.

Too little salt and you don't get the seasoning or moisture you're looking for.

Too much salt and you've got a salty piece of chicken.

And then factoring in everyone is going to brine for a different amount of time,

We wanted Juicy Bird™ to do its job without taking over the plate.

That balance also means something really important when you're using a rub.

A lot of rubs marketed specifically for chicken are pretty salty. That's not necessarily a bad thing. They're designed to bring a lot of flavor to the outside of the bird.

But when the chicken has already been properly seasoned from the inside with Juicy Bird™, you don't need to be afraid of using your favorite rub.

Use it.

Just don't bury the bird in it.

The brine gives you the foundation. Your rub gets to finish the job.

How to Use Juicy Bird™ Overnight Poultry Brine

It's easy.

For one chicken, mix 1 cup of Juicy Bird™ with 1 gallon of cold water.

Submerge the chicken and refrigerate for 14–18 hours.

Then cook it however you like.

Grill it. Smoke it. Roast it. Spatchcock it, Cut it up into pieces. Whatever makes you happy.

Juicy Bird™ can also be used with turkey and other poultry. And if you want to put your favorite chicken or poultry rub on it, go right ahead.

That's actually one of the things we love most about Juicy Bird™. It doesn't compete with the way you like to cook. It gives you a better piece of chicken to start with.

Two Years. A Lot of Chicken. One Brine.

We're a small company, so we don't have a giant research department or a room full of food scientists.

What we do have is a kitchen, a lot of curiosity, and a willingness to keep making chicken until we get it right.

And we did it with an ingredient-first approach.

What does that mean?

It means we didn't start with a target cost and then work backward to see what ingredients we could get away with.

We didn't set out to make the cheapest brine.

We didn't set out to make the most complicated brine.

We started with the ingredients we wanted in it, built the formula around them, and kept testing until the chicken tasted the way we wanted it to taste.

That's a different way of doing things.

Two years of testing.

A lot of chicken.

A lot of notes.

And eventually, one brine that made us say:

"Yep. That's it."
